Hearty Garlic Potato Soup

This is from the March/April Cook’s Illustrated, topped with fried leeks, crumbled bacon, garlic chips, and chives.
This was actually my second attempt at the soup. The first attempt was plagued by poor timing, forgotten thyme, and a can of chicken broth booby-trapped with its own herbs and veggies and decidedly non-matching flavors. Must read can labels more carefully at the supermarket, if I’m going to be lazy and not make my own at home.
Mmm mmm good. Definitely serve with bread to balance the richness of the soup.
There will be no vampires in my apartment tonight, I tell ya!
